Turkey Meatloaf

Ingredients
  

  • 2 lb ground turkey
  • 2 eggs
  • 1 carrot, grated
  • 1/2 yellow onion, diced
  • 1 cup spinach, finely chopped
  • 2 tbsp sour cream
  • 2 tbsp hoisin sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tbsp breadcrumbs

Method
 

  1. Preheat the oven to 325°.
  2. Combine ground turkey, carrots, onions, spinach, and salt in a large bowl. Mix gently with a spatula, then add the eggs, and mix again.
  3. Add the wet ingredients — fold in 1 tablespoon of the sour cream, 1 tablespoon of the hoisin sauce, and Worcestershire sauce.
  4. Grease a loaf pan and fill with the meat mixture. Don't pack it in too tightly.
  5. In a small bowl, mix together the remaining tablespoon of sour cream with the remaining tablespoon hoisin sauce and stir well. Spread a generous layer of the mixture across the top of the meatloaf.
  6. Sprinkle breadcrumbs on top of the meatloaf, and then bake for 50 minutes at 325°.
  7. After the 50 minutes have passed, set the oven to Broil and broil for 2 minutes. Remove from oven and enjoy!
