Baked Salmon with Garlic Butter

Salmon is a sta­ple of my diet at school, as much for its con­ve­nience as for its wide­ly tout­ed health ben­e­fits. Baked salmon in par­tic­u­lar is the poster child of con­ve­nience — it only real­ly needs a mod­est amount of sea­son­ing (though I must admit that I, per­son­al­ly, like a lit­tle more), and then you can stick it in the oven and leave it alone with min­i­mal super­vi­sion, and know that you will have a nice hot meal min­utes later.

These are real­ly the only ingre­di­ents you need — olive oil, salt, black pep­per, gar­lic, and but­ter, plus the salmon, of course. For a fun twist, I like to use truf­fle but­ter (pic­tured above, in the small black tub) instead of reg­u­lar but­ter. It seems to func­tion in large­ly the same way, so it should­n’t alter the recipe in any sub­stan­tive way, oth­er than to add some nice truffle‑y flavor.

The olive oil and but­ter func­tion large­ly to seal in the salmon’s mois­ture and to pre­vent it from dry­ing out while in the oven. I some­times cov­er the salmon with alu­minum foil as well to dimin­ish the chances of over­cook­ing it. (The dark flecks in the melt­ed but­ter, pic­tured above, come from the truf­fle aspect of the afore­men­tioned truf­fle butter.)

Although salt and pep­per (plus the olive oil and but­ter) are enough to give the salmon some nice fla­vor, I per­son­al­ly enjoy adding extra sea­son­ings. Some of my favorites are truf­fle zest, the Trad­er Joe’s Mul­ti­pur­pose Uma­mi Sea­son­ing Blend, and  Trad­er Joe’s 21 Sea­son­ing Salute.

And that’s basi­cal­ly it — you can go ahead and stick it in the oven! The rule of thumb that I’ve heard and use is that you should cook the salmon about 5 min­utes for every half inch of thick­ness, so be sure to mea­sure your salmon before baking.

Ingredients
  

  • 1 large salmon fil­let (about 1.5 pounds)
  • 2 tbsp but­ter
  • 2 cloves gar­lic, fine­ly chopped
  • 1/2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pep­per
  • 1 tsp all-pur­pose sea­son­ing (option­al)
  • 1 tsp truf­fle zest (option­al)

Method
 

  1. Pre­heat oven to 350°.
  2. In a skil­let, melt 1 table­spoon of but­ter on medi­um heat. Add the fine­ly chopped gar­lic to but­ter, stir­ring occa­sion­al­ly until fra­grant. Pour the mix­ture into a small bowl and set aside.
  3. Melt the remain­ing 1 table­spoon of but­ter in the microwave. Line a cook­ie sheet with either parch­ment paper or alu­minum foil, and brush a thin lay­er of but­ter onto the sheet.
  4. Lay the salmon on the cook­ie sheet. Pour the olive oil onto the salmon, gen­tly mas­sag­ing it into the fish. Sprin­kle lib­er­al­ly with 1 tea­spoon of salt, or more accord­ing to per­son­al preference.
  5. Take the remain­ing melt­ed but­ter, and spread gen­er­ous­ly over the fish. Sea­son gen­er­ous­ly with the remain­ing 1 tea­spoon of salt and 1 tea­spoon of black pep­per. If you would like to add any oth­er sea­son­ings, such as all-pur­pose sea­son­ing or truf­fle zest, you can do so as well.
  6. Bake the salmon at 350° for about 12 min­utes, depend­ing on the thick­ness of your fil­let — the rule of thumb is about 4–6 min­utes per ½ inch of salmon. I gen­er­al­ly use a fair­ly thin fil­let to avoid dry­ing out the fish.
  7. After the 12-minute mark (or more, depend­ing on the thick­ness of your fish), remove the fish from the oven and spoon the but­ter gar­lic sauce on top of the salmon, and then. Set your oven to Broil (either High or Low is fine), return the salmon to the oven, and cook for anoth­er 2 minutes.
